Have made the mistake of not booking two vehicles onto the channel tunnel when I first looked at prices in April, prices today are just over £100 more, do those that use this service frequently know if this is likely to keep rising or might come down?
I am looking at dates in August 2019...
IME they're only going to get more expensive now. You could try clearing your cookies / use a VPN to chip a few quid from any variable pricing system they may have...
My advice, book early, or at least for the love of all things holy, don't tell my wife when I'm planning to go least she 'checks the prices' 5 times a sodding day sending them skyward.

I've given up. I drive down from Scotland so need a break and I've found night ferry from Harwich with tiny but comfy cabin is more or less the same price as (usually shit) B&B in Folkestone plus Tunnel. Only real drawback is ferry dumps you in a town and you have to navigate your way to the motorway whilst adjusting to being on the wrong side of the road, whilst the tunnel dumps you in the middle of nowhere, a short drive to the motorways on quiet roads.
On the way back there is an excellent fish and chip cafe opposite the Hook of Holland terminal though.
Oops, this has just reminded me that we haven't booked ours for the end of August. Best get on it.
Last time I went on holiday to Brittany it was cheaper for us, 2 adults 3 kids, to get the ferry and a hotel for the night on route and add an extra day in Normandy to our holiday than to use the tunnel. We use it for work when we are sending vans out and it is much quicker but I'll swap a quick crossing for an extra day away. Different of course if it will reduce the time you can spend where you want to be.
Speaking of crossings, has anyone tried the Portsmouth the Bilboa Santander ferry? I can't imagine spending what must be a LONG time on the sort of rusty tub I've crossed the channel on over the years.
I've looked a few times, but I can't get a price or even times out of them without actually finding some availability and they always seem fully booked.
We did Portsmouth - Santander a couple of years ago to get to the Picos. Loved it. Not been on a cross Channel ferry for decades but the Portsmouth - Santander one is most definitely not a "rusty tub" plus the food (and wine) is excellent. All in all it was a very civilised way to travel (certainly preferable to driving there) although I think in bad weather the Bay of Biscay can get "interesting".

Is it very spendy? I'm looking at this summer's pricing and it's at least £1k for 4 of us. I don't mind the concept, but not if it costs more than flying/car hire.
Portsmouth to Santander can already be booked up for some days July and August in December the previous year. From May until October it is always full.
I use Portsmouth/Santander twice a year.By the time you pay for a ferry to France,fuel,tolls and possibly a night in a hotel I don't think there's much difference in pricing.Normally,one way,2 people,dog,pet friendly cabin,about £350 on the economie ferry.The pet friendly cabin increases the cost and it would be more expensive using the non economie ferry. I have to drive down to Southern Spain so this route gives me a long rest,about 28hrs,before I set off again.
I've gone for this for the tunnel, £460 for 10 crossings to be taken in a year and you can share them with a friend. Provided you don't mind avoiding the busy parts of the day there are no other charges. Still crossings available for summer school holidays. I've just booked one at £92 return.
