I've used this one before http://www.deliciousmagazine.co.uk/recipes/paul-hollywoods-ultimate-carrot-cake/

Keeps it nicely bake off themed. Frosting is quite sweet though, tastes better if eaten the day after it's made for some odd reason. I suppose you could make the frosting the day before.

Try any recipe which features an addition of tinned pineapple chunks - for a deliciously moist cake!

Try the hummingbird recipe, Buenas Migas, or the white rooms .. All fantastic recipes, I eventually decided that the Buenas Migas was my favorite
