Ok, i'm confused by the whole nikon / cannon this modle is better ect...
I'm looking at getting a dslt capable of hd video (full) and decent snaps.
I so far have found this snazzy lil package:

The whole canon/nikon thing is much like views on a forum like this regarding whether HT or FS is a better bike, or whether hope brakes are always better than Avids .... both do the job, and more often than not, the ability of the person riding the bike makes more of a noticable difference.
Both Canon and Nikon setups will take decent photographs, and both have the ability to upgrade the lenses etc etc. the photos they take are down to the ability of the person pressing the button.
I personally went the canon route ... mostly swayed by how the camera felt in my hand ( got big hands ) . The comparable Nikon of the time felt too small for my hands.
I wasn't overly fussed about the differences between the image resolutions etc etc, it needed to be something i would be comfortable handling
dpreview.com has what I would call a reliable, objective reviews of cameras as they come out and is one of the first places i jump to for read up on the current cameras.
Canon/Nikon is a question of personal choice, they're more or less the same.
I too run Canon, I like the lenses.
As above - since the stuff you're looking at comes from Jessops, you can go along and pick up a D3100, take some pictures and see what you think. If you like the size, controls etc., you can't go too far wrong. I don't know anything about that light, though.
The Nikon canon thing is indeed often subjective, however, I think Nikon still lead the way in flash work (and I don't think any Canon user would dispute that), and Nikon's higher end DSLRs can use any lens from around 1977 onwards* (some earlier lenses also possible, and almost all earlier lenses after a simply modification) as Nikon have kept the same mount. Nikon also tend to use a type of plastic for their bodies that no one else in any field has managed to replicate; very solid yet tactile.
* Has to be an 'Ai' lens, the first of which were released in 1977, other lenses then following.

Kit lenses are average. You'll probably want something a little longer and better quality after a bit. Suppose it depends what you're taking photos of.
My eos550d is pretty damm good in low light and for video.

The Nikon D3100 is their 'entry level' DSLR and is highly regarded as such. The lens in the package you have indicated is the standard zoom so would be a good choice too - as I said, go and actually pick one up - if you like it, you'll soon manage to work out enough about modes, settings etc. to get started.

Low end Canon have big numbers, top end Canon have small numbers.
I guess the EOS1000d is the bottom of the range and the EOS1d is the top.
From low to high EOS60d, EOS50d, EOS40d, EOS7d, EOS5d and finally the top of the range EOS1d.
Don't really know how the lickle cameras work, I assume an EOS500d is better than an EOS550d.

I think the incremental numbers reflect age, don. So they start with 500d and then the next version is 510 and so on.

To a degree yes, as in the EOS20d and EOS10d are older and withdrawn products, but in their day they were up there. I think it gets more confusing as they add more features and the lines are greyer, but the idea is the same. I'm not sure how the likes of the 450d or 550d work or fit in though.
I bought a Nikon about twenty years ago, still got it. It was about 12 years old then. FM2; one of the best film cams ever made. Also got an 801s and an F5. I like Nikon cos they're super tough and reliable. And you can use right old lenses on 'em, as already pointed out. Best system going imo.
Waiting for an FX sensored cam what does not in any way cost thousands of pounds. 😐

3 digit - low end, e.g. 500D, 550D, 600D
2 digit - mid-range e.g. 50D, 60D
1 digit - high end, e.g. 7D, 5D, 1D.
Within the lower and mid-range the larger the number = the newer and/or better model. Then what DonSimon says for the top end 7D then 5D then top of the pile 1D.

I don't know about the spec differences between the two, but the 60d has the flip out screen. Does that make it better or worse in the hierarchy?

Not quite right the numbers in the single digit ones don't denote age (that is denoted by mk1 or mk2 or mk3 etc or sometimes an 'n') - the 7D isn't better or worse than the 5DMk2 - just aimed at different markets (7D for sports / wildlife vs 5D for general and wedding photographers). The 7D has better autofocus and weather sealing than the 5D whereas the 5D Mk2 is full frame and has lower noise.
Above the 5D Mk2 are the two 1 series cameras (1 Series are canon's pro range). Currently the 1Ds (full frame) and 1Dmk4 - the 1Ds is due for replacement (if it's replaced at all).
One final point, it's debatable if the 60D is better than the 50D - the 50D was the last of Canons double digit enthusiast cameras with an magnesium body and micro focus adjustment. Presumably they felt there was too much overlap with the 7D and a big jump in price. So with the 60D they made it a bit more consumer focused (i.e. plastic body) and repositioned their ranges.
Not that i'm a camera geek or anything!
What sort of video do you want to do? I have a D3100 and the quality is excellent for pics and movies, but movie clips are limited to 10 minutes per clip, no good if you want to take a continuous event like a kid's school play etc. The combination of massive usable ISO range and the VR in the lens means I would almost never use the video light. Sony supposedly have longer video clip length, but I don't know of a dslr with unlimited.

The whole time limited thing is a bit of a pain on the Nikons, the D7000 stops at 20 minutes - I've hit it filming talks at conferences which are often longer.
