Slow roast with garlic, ginger and honey. Pan fry the skin to crisp it up first though.

I could run 100s of the buggers over in the lane outside my place .More of a challenge than shooting a low flying slow moving target that gets driven towards you

fry a whole bird in a pan, just to brown off.
then place in a slow cooker with half a bottle of dessert wine or cheap sherry'
cook on lowest setting for 7 hours.
skeleton should come out whole then.

serve tender flesh on a pile of mashed spuds and mashed carrot and swede.

Pheasant, bloody horrible, I'll never touch another one.

I'm surprised a man of your resources, CFH, is looking for recipes. A man of good country breeding would either have a several good recipes to hand or a good level of staff who would have several good recipes to hand.

😆 @ Don!

No, I just like looking for other ideas, rather than just going over the same old ground. I've got plenty to get through, so for example, I never would have thought of a ginger/honey roast pheasant. Now, however, I'm going to try it!

The flavour combination works better than it sounds. Throw a few carrots, parsnips, and baby red onions nto the roasting tin. Hmmm.
