My birthday is just around the corner. My wife has asked if I want bike bits, or new gadgets etc but to be honest I'm pretty happy with everything i have so she suggested an "experience" type present.
i have no idea what to pick so please fire away with any of these type of days that you have enjoyed.

1 to 1 MTB skills training can be good. I got a 4x4 driving skills course (actual training not just hooning around) for my last birthday and that was fun and interesting. Balloon flights are good, but it can be a pain to get a flyable date.
4X4 with a proper set up, I had a day with Range Rover at the factory which was excellent.
Track days are fun if you listen and don't try to be the next Hamilton, you're not! Unless you've already got a McLaren contract. In which case I apologise.
60 clay shoot at a gun club?
Depends on how much dosh is appropriate.
TBH most track days are not great value in ££'s per minute behind the wheel.
Unless you go to Palmer Audi for the full monty
MTB skilz day.

Butchery!
I did a beef butchery evening at the Ginger Pig in London. Really interesting, learnt a lot about beef, cut up some cow, ate a fab forerib roast + bread and butter pudding + wine... and took £60 of meat home.
