Gotta be Star Walk. I don't have an iPad, but apart from obvious things like iBooks, Star Walk would be the first app I'd download. It's just so good and lovely to look at on the iPhone's little screen that it has to be a knockout on the big iPad screen. Other than that, GarageBand, and various synth and sequencer apps, like the Moog one.
