I'm replacing an old bathroom cabinet that has integrated light complete with a switch within it. The new light to place above the new bathroom cabinet has no switch so if I wired in as is it would be always on - so not ideal.
Is it possible/safe/easy to add a switch to the new cabinet light cable (as my thinking is this would be preferable to the faff of adding a wall switch for the light)?

If you have a permanent live then it should be pretty simple to add a switch. A bathroom is one of the few places where stricter electrical regulations apply. These are different for the different parts of the UK and it will impact on where a switch can go.
So they expect it to have a switched feed, or are you missing an advance in tech since your last cabinet and it's automated on opening the door?
Mine has a light in the mirror and the switch is capacitive, so essentially constantly finger printed, looks nice when clean though!

I think expecting a switched feed the current cabinet is from the 80's by the looks of it. The new one without integrated light was purchased was from Ikea (should have bought one with an integrated one in retrospect perhaps changing it would be the least hassle.
Be careful - Water/moisture/wet hands in a bathroom and electricity do not mix safely!
