I have to admit I enjoy sharpening knives freehand (ie no devices) , which I get sharpish using fairly coarse stones but when I move on to finer grades the blades never seem to get much sharper and often become more blunt. I know about raising the burr then removing it which for general use would be enough but I want to get them even sharper and wonder where I am going wrong. So many vids on YT describing different methods... I just want to follow a simple procedure. Any advice/tips would be much appreciated.

Best advice I had was listen to the sound. That and using a felt tip pen to draw on the edge at first so you can see where you're actually sharpening.
Years ago I was about to buy some fancy knife sharpener when my Chinese housemate showed me how to sharpen a knife using a teacup or bowl.
That unglazed ceramic works pretty good. Use a shallow angle and draw the blade across it.
I was just about to suggest the same... when I was a [s]kitchen god[/s] slave in chalets in the alps, I'd just use the rim on the bottom of a plate and in no time the tomatoes would be cowering.
