Okay, so last night I put a couple of bottles of water in the freezer, went to take them out this morning to see two crystal clear bottles but when I picked them up, the water begin to slowly freeze over. It was as if in slow motion the water went from clear through crystalisation to frosted opaque. Looked pretty cool and wondered what was going on. The water inside was definitley frozen solid when I opened one up.

Sounds like the water was below freezing but hadnt froze to a solid.

But when you knocked it as the temperature was below freezing it all froze in one go.

Supercooled water?
Dunno of that's the right term, but the water gets below freezing without solidifying, then the movement sets off the freezing process.
