We have an immersion with a separate heating element/thermostat (they may all be actually like that), and the thermostat had an intermittent problem with tripping, the heat would go off and you would have to press the little reset button on the thermo to get it going again.
After a while I figured the thermostat was faulty and duly replaced it with a brand new one form screw fix, First month or so it was fine, and not it is tripping/needing resetting again every couple of weeks.
Can anyone brighter than me tell me what is wrong? Is it my thermostat again or something else?

Does the water get scalding hot when it trips out?
Might be a duff thermostat straight from the shop.
Had a similar problem a while back
The thermostat rod was a little bit loose in the tube in the immersion heater that it slides in to. I think the actual thermostat sensor is right at the end of the rod and it was in effect insulated from the water temp by an air gap so the water would get smoking hot and trip the stat.
Anyway a smear of copper grease on the thermostat rod fixed it.
