Is there any way to start video recording from lock screen?
(ie.with a double press of power button)

or any other quick way to script a shortcut or something from the home screen to start recording video?

If you double click the power button that should open the camera so you can then press and hold the shutter button to record video.

The former is (usually?) a system setting and the latter a feature of a particular camera app. But yes, double-click and then 'start video' is plausible.

If I do this it opens the camera but then opens Google assistant, so it depends on what phone you've got (My old One+ allowed me to configure more gestures than my Pixel does) and what version of Android.

I just wiggle my Motorola G9+ and the camera opens. Shake for torch as well, it's great.

Although not when you're using your phone as a remote for playing an Xbox dance game!!

Do you have a pixel that has the squeeze function to get to the assistant? Sounds like you could be squeezing at the same time as double press for camera.
