I no longer have a Samsung phone.
The Google email thing doesn't say how many emails I have waiting on the icon.
The outlook one splits my emails into focused and something else.
I just want all my emails from 3 accounts in one place with an amount notification.
Just turn off the focus thing in the settings of the outlook app. There aren't many settings so it's easy to find.
It's the best compromise email app IMO
Edit - I also turn off the conversation groupings thing as it's infuriating. After those two are turned off its a very good app.
As above - I've tried a few (AquaMail, BlueMail, K9, Gmail etc) and keep coming back to Outlook, just turn off its annoying helpful features.

Long press on single email unti a ticked checkbox appears. This will also give a three vertical dot icon top right. Tap that. Tap select all. Tap 3 dots. Tap Mark as Read.

I've tried a few; Outlook was good, until I realised that it wasn't sending emails reliably. Also tried Nine, which is very good but a paid app (and I'm cheap).
BlueMail has been absolutely beyond reproach since then - it does everything it's supposed to without fouling anything up. Tbh it makes you wonder why other email apps can't just do that...
I've been using Aquamail for a few years now. It's not free but is very cheap. It's a clean app so there are no strange IP addresses that it connects to other than those of your email accounts. Manages multiple accounts using POP or IMAP, and has loads of features. You'd need to explore the settings, of which there are many, to get the most out of it.
Ah just noticed it doesn't display an amount icon in the task bar, but will show multiple icons when more than one account has an email. I usually just drag the task bar down to view that kind of info.
K9 Mail is good. It is free/open source. Plenty of settings, so you can make it work how you want. Works fine with multiple accounts and folders etc. You can use the unified inbox if you want. There is a widget that shows unread messages.

I'd change clients if I were you.
For me, I primarily use Gmail and Hotmail. I use the official Android clients for both, and the websites on a PC. Third party apps can be problematic (see above) and in any case I want to keep them separate otherwise I wouldn't have multiple accounts. I haven't used a full-fat PC email client (aside from Outlook at work) for decades.
If I wanted multiple email addresses that all went to one place, I'd buy a domain name and then have *@domainname.com forward to a public provider like Gmail.

I do have a domain (a couple in fact) and use Outlook on my "work" PC. I use BlueMail on my phone/tablet/iPad because I think it works/looks better than the stock Android/Apple offerings - but reading the above makes me nervous.
I have old Hotmail/Gmail accounts which are rarely used and I only add them to BlueMail because I can - would not be an issue if this was not possible.

And is probably the cause of your issue. Android (by default, in which i mean stock) until recently (oreo i think) did not allow the presence of app badges. it does now but the app also has to support them. without knowing which phone and which version of android you are running, it is hard to help.
Go into settings, find the gmail app, find the notification section and see if there is an option to turn it on.
alternatively, you can replace your launcher with a differnt launcher such as nova prime. this gives the functionality you are looking for, and is not as dependant on the version or app you are running.
if outlook is displaying counts and you can sort the views use that, its a really good email client. Gmail is also good, but you may need to buy a launcher to get the badge you need (however you can then badge any other app)
