I have a pick up with 265 70 r16 tyres and i want new wheels to put these same tyres on.
I know i need r16 dia rims but what width wheel?
I have seen 16 x 7 will these be ok?

They will be ok. 265/70R16 should be on 7" to 8.5" rims. So 7" is at the narrow end of suitable range.

You also need the right offset, usually given in mms.
