How do i know what to set the pump speed to, and with a bypass radiator should the lockshield valve be fully open?

Ideally you want a pump which adjusts the speed based on load, otherwise you'll be tweaking it all the time. To find out where to set it, find the furthest radiator and see how long that takes to warm up, too slow and it will take ages, too fast and the pump will be noisy / straining when all the TRVs shut down as the house warms up.

As for bypass radiatior, don't set it fully open as that will short out the whole CH circuit, so it needs to be the same 'resistance' as all the other radiator paths.
