intrigued by the ortlieb quick rack as it seems to have a very narrow 'triangle' on the side. Which of their panniers is it designed to carry (my experience of racks that don't have a dogleg rear strut is that the rear of the bag dips in and hits the wheel.)

Because of the way the rail is angled, the pannier does look extra un-supported at the back, I reckon you might be right about it being wobbly. That's the Quick Rack light in the report though, the standard quick rack has a more traditional and flatter top platform.
I have an Ortlieb Quick rack albeit the one with the platform. It works fine with my Ortlieb City panniers. They have quite a stiff back to them so that might help but I haven’t had any issues. The rack is excellent and really sturdy. I thought it would flex but it doesn’t.
