I've got the Evo's which are great, bomb proof and super fast but I like quiet.
Are the XTR's as quiet as XT's (Which I know) and are the seals as good as Hope. And some Xtr's aren't 6 bolt discs - which limits the discs I put on - seems a pain as I have 3 bikes to look after (not all mine!) but all Hope 6 bolts. Decisions!
Pack it with grease and save a lot of faffing/money/regret.
Can't really help with the shimano/hope debate but as for the disks you can get a 6 bolt to centrelock adapter. Might help keep things standard.
as smatkins says - just a bit of grease really reduces the noise. My pro 2 is about 5 years old and is just about silent (and yes I do service it!)
