Hi,
Does anyone know if it is possible to use a "Shimano Deore XT BR-M8100" (MTB) brake caliper with "Shimano GRX ST-RX810" (gravel) brake/shift lever?

Yes - you'll just need an appropriate SH90 hose with a banjo caliper end fitting.
Got a couple of bikes with GRX STIs and both M985 and M9020 calipers (same piston size as M-8100 caliper). Work a treat.
