I am looking for an XC event for next year to aim towards. I found this in my searches and was wondering is anyone here has done this event or done any riding in the area and can give me an idea of what it is like?

I've also looked at https://www.appenninica-mtb.com/en/, which looks good, but is a bit close to annual family holidays, or maybe back to Poland for another go at the Beskidy MTB Trophy.

Looks ok but a bit pricey.

I've not done it but Appenninica is meant to be really good.
I'm doing the 4stage Marathon in Lanzarote in Jan again this was really good and highly recommended, i'll also do 2Reinos Spain in Oct.
Other options you could have are Costa Blanca in Feb, Cyprus Sunshine Cup, Iceland 360 https://www.glacier360.is/ and http://www.lariojabikerace.com/en

I don't have anyone to partner with, so 2 up races are not really possible at the moment.

That La Rioja looks good, but is 4,800 riders. What is the congestion like for someone who is going to be mid pack, or is it all fire road?

I did the Roc a few years ago, not a stage race but it had loads of riders in it. Sadly for me I was mid pack and the number of riders meant it was just a que at each tecy DH section. Spoiled it really. If you are fast and on a fast bike you can get away from the crowd. If you dont you will be stuck behind riders, some may be fit but have poor skills. Id look for somthing with fewer riders in it.

I'm not slow, but I found these events in Europe are very fast, and this being a UCI race will mean you are no where near the front.

When I did the Beskidy MTB Trophy, I was as fit as I have been, and was at the back of the pack everyday.

Fair point on La Rioja I don't think i would fancy it with that many riders for the same reason.
Cyprus Sunshine cup is max 250 riders but very quick, Lanzarote is 500 first mile is an all out sprint for a mile or you get held up as soon as it gets rocky/loose/uphill in anyway at all.
Costa Blanca is like Lanzarote a few hundred riders but a lot more climbing.
