need to change the bearings in my roam rear hub.

Tried to remove the cassette - was really tight (never been off since new) finally something starts turning. except the cassette has come off, but what i assume is the end cap is still fixed to the cassette, and i can see the bearing in there.

What have i done wrong?!

Nothing wrong - that happens. Tap the end cap out. Sometimes the outer freehub bearing comes with it. That can be tapped back into the FHub. When you put the cassette back on be liberal with the copperslip.

Tap it out, both will come. Then push the bearing back into the Freehub - it only goes in about half way, you can do that by getting it slightly in and aligned then pushing the wheel down onto a hard suface, its not the tightest fit. As mentioned afterwards don't spare the copperslip when refitting to prevent the same issue happening again. If you dont have copperslip use grease, but copperslip is better.
