Would this setup work: Shimano 11 Ultegra (or Dura Ace) cassette with XTR M9000 rear mech & shifter?

I'd have thought so. You'd need a wheel with an 11spd road freehub though.

Is there a difference between MTB and road free hub? The wife has 11spd ultegra in her Mavic crossride 29s

Yes, road 11 speed free hubs are 1mm longer. Mavic cunningly foresaw this years ago and included a spacer.

Hmm, would the 10 speed Ultegra/Dura Ace cassette work then? It would fit the freehub body but the question is whether the cog to cog spacing on the road cassettes is the same as on the mtb xtr cassette.
