I'm after some with a pad inside so I don't have to wear shorts beneath.
Any recommendations please.

Ive had allsorts of winter bibs, the DHB ones I got last year, windslam I think are better than the Assos ones I had at nearly three times the price.

Its worth getting a pair without an insert imo. No need to wash them so often. Wear your shorts underneath.

What size did you get Spud?

I'm 78kg 183cm with a 32" outside leg.

Thinking the large size.

Tried them on when they arrived and very pleased. I have some campag bib shorts which are really comfy so I expect these to be the same, only warmer!

Edit to add: I'm a bit shorter than you and got a medium which is a good fit, they have some large left which might do you.

I'm 5'7 and 11st 11 and went for medium. Fit very well. I'm tempted by the water resistant ones for this winter.

I've got some Gore ones (£70 ish IIRC) which are really nice, not designed to be waterproof though, as you may expect. I've never heard a bad word about the DHB ones though, I'd probably buy them for a lot less than the Gore ones if I was buying again.

No. You can get them (Endura do some), I was thinking of getting some but I've heard people say the material is too thick and not as stretchy/bendy as normal lycra so they're not as comfy.

I don't think I've ever been especially wet in normal bib tights - I suspect you'd have to ride for a long time in horizontal rain for them to make themselves worthwhile.
