Beauty is in the eye of the beholder , but most people think the same things are beautiful. Or so said my philosophy and architecture lecturer.
Only 50% do, DH bikes and small jumpy hardtails look ace. XC bikes need the seat with some decent seat-handlebar drop. I always think ENDURO style bikes look better with 'em up too.
It's a form and function thing for me, similar to what monkeyfudger says.
On an MTB, I like to see post. On a road bike, nope.

I agree that most MTBs look better with the saddle dropped (i.e. dropper lowered instead of extended). I dunno why. Maybe they look more like a BMX which all the cool kids ride?

I like that so many enduro bike publicity shots have a Reverb with the collar slammed right down to the top of the seattube. Which makes me think, that seat-tubes too high, not buying one of those.

I don't like the taste of beansprouts because they taste like wet soil.
I don't like bikes with their saddles down because it makes them taste like cucumber.
I would guess someone wouldn't like cucumber because it can be bitter. (IMO of course)

Depends on the seat angle for me. If its angled so its flat when at full extension they look weird when lowered, pointing down at the top tube. A slight upwards angle like on a bmx looks great though.

When i see a non dh/jump bike with a slammed post it first makes me think - well your bikes too big for you followed by a closer look to see if i recognise it from the local stolen bikes facebook pages.
A bit like shoes, always pictured in a small size as they just look 'better' - in fact I'd reckon that most bikes pictured in adverts are small/mediums too.

Agreed. Ergo do smaller cucumbers look better than larger ones?
I'll add my vote to the 'they don't' camp. can't bear people riding round with their knees up by their ears every time they make a pedal stroke
