I run a Shimano 105 5600 groupset with a triple chainset.
Recently, my rear derailleur sheared in half whilst pedaling, for some unknown reason, and I need to replace it.
What cage length rear derailleur do I need? Medium or long?

You would want a GS cage which is technically a medium, although it's the longer of the road cages.
SS = short
GS = medium
SGS = long

As above. Road cages come in two sizes. You want the longest one.
