I've not bought V brake pads before, I'm after a set for my touring bike cantis.

What's hot and what's not?

I've always been happy with Kool stop black compound, although some prefer the salmon.

Is there any advantage going for the replaceable or the unitary types

Replaceable is quicker to change blocks, no need to re-position. How big an advantage that is depends on how often you need to change them. Have repalceacble cartridge type on the missus bike and non-cartridge type on my old O2 (have that the wrong way round really 🙄 ) and can't tell any functional difference.
