is there a way to find out the max / min tyre widths that I can use safely

Some tires work better than the others, but you can go from 2.3 to 3.0 on 35mm internal rim.
Look up the ETRTO work, they have tables for max & min tyre widths for each width of rim. Actually the table I usually refer to does it the other way round: what rims are suitable for a tyre that is Xmm wide? It also only goes up to 29c rims.
A typical example: 19c rim will take tyres from 28mm to 62mm, roughly 1.5 times rim width to 3.2 times rim width.
Take published sizes with a pinch of salt. A Maxxis 2.3 squares off on a Flow MK3 so you'd have no chance on a 35mm.
35mm internal is best used with tyres upwards of 2.6. Overkill otherwise.
I assembled an 150/150 27.5+ bike recently. I'am not a fan of the 2.8 inch rubber (yet) - decided to go with 2.6 inch tyres.
After some reading and asking I picked 35 mm internal rims (FunWorks).
Those rims with the 2.6 inch Magic Mary: perfect match! Run the front tyre with a bit under 20 psi and rear a bit over 20 psi.
This bike is downhill a real beast. Absolutely happy with the rims/tyres.
2.8 inch rubber: rims around 40 mm ?
2.4 inch rubber: rims around 30 mm (or even 25 mm)?

Presumably the 'x35 plus' sticker means internal width of 35 (*they were a sod to get tubeless so I don't want to take the tyre off till it's knackered to measure), *so measuring with a tyre on - so not exact,measuring from outside edge to outside edge of the rim is about 40-41mm - does that make sense.
I did email syncros about the rim but they were unable to tell me the internal/external widths or what tyre sizes they supported (and yes I was somewhat unimpressed)
sounds like 2.6 is ok (OE fitting was 2.8)
I'm running 2.35 Mary/Rock Razors on my internal 35mm/external 41mm Ibis wheels - they're spot on and come out similar size to a 2.5 Maxxis.
May try something bigger next but space is a bit limited on the current bike.
Maxxis has WT (wide trail?) tyre models starting at 2.4” width, I don’t know how much difference there is but I can say that 2.4” DHR2 WT is excellent on 35mm rims.
