Iv been divine around in my spare box for my sons bike build and IV found a 10spd M615 rear derailleur with clutch, Iv planned to go single speed on his bike - what shifter do I need to go with this? Also how can I tell the cage length? (Looks short but best check)

I assume, by single speed, you mean 1x10?
Any 10 speed shimano shifter will work.

Probably stamped on the cage will be either GS or SGS. GS is medium and SGS is long cage.
As above, any 10 speed Shimano shifter will be fine. Can be picked up cheap second hand.
