I got a payout from the bike insurance company (Bikmo, who were really good) after my bike was nicked.
Any recommendations? I had a Cube Agree before, not bothered about disc brakes.

Does it have to be new? Or have they just given you the cash to get what you want rather than buying you a new bike up.to that value?
And why not discs? Of nothing else a rim braked one will depreciate faster than a fast thing, everyone seems to be trying desperately to shift them now, like V braked mountain bikes at the turn of the century.

I don't like the faff of disc brakes too much and the stock wheelsets seem to be pretty heavy by comparison I have found.

He'll get a lot more (or less, if you consider the weight) for his £2k if he goes for rim brakes. I made the same decision, got a Rose Xeon GF with Ultegra and Fulcrum wheels for £1400.
I think it still comes as a shock to those who (quite legitimately) like discs that some people are quite indifferent to them. To me they're just extra weight and inevitably extra noise, for marginal benefits I don't need or want.
To the OP, too much to choose from out there, and I'm not usually a fan of online places, but I do think you get a huge amount for your money from Rose, and get to customise the spec (to some degree) so for instance you can customise gears, crank lengths, stem lengths, tyres, etc. etc.
