I was just mulling this over when I made a big mess, pringled a rim, snapping a spoke, bent the rear mech, and bashed the front caliper which is now weeping fluid. So now there are a couple more items I can add to the list - I guess the caliper is salvageable. So Sunday afternoon no riding for me, what do you expect to regularly replace?
Disk brakes - I run mine for about 18 months, sell them on and buy new ones from Merlin. I would need pay an LBS to bleed them, and with the cost of pads, flog the new rotors etc I am not much out of pocket.
Although I find bikes are pretty consumable, rarely keep them more than a couple of years so bar cassette and chain I don't recall replacing anything because it was wore out

Drive train, bearings, tyres, saddles thats about it really?
Chainrings, chain, cassette, jockey wheels, brake pads, bearings, brake rotors, tyres.
That's about it. There will always be a certain amount of stuff that gets destroyed/broken, but eg. a new saddle isn't really a consumable.

Gear cable inner and outer.
Grips and saddles not so much. They're stuff that wears out occasionally, like mechs or rotors.
Rims, tyres, discs, bearings, pedals, grips, cables, mechs, spokes, chain rings, cassettes, chain. Quite a lot really.

+1, everything else is a "consumable" - or you don't ride enough 😀
Pads, bearings and bushings, cables (inner and outer), tyres, chain, cassette, front rings, cleats, jockey wheels. And rear mech hanger. Having said all that, my bike is five years old and the only original components are the frame, rear shock, hubs and some spokes.
As others have said,pretty much the whole thing, although maybe not bars, stems or frames - although I realise these all have a finite lifespan I would expect them to last long enough to not be classed as consumable (ie not have to replace them regularly).
Cranks Bros pedals. Still love em though.
Tyres, grips and brake pads. If you buy quality stuff for the rest it'll last you ages. Had my 721 rims on Pro2 hubs for about 4 years now!

You are the Perfect Bike Rider - in the eyes of the bike industry. Why sell things if they haven't worn out yet? Why do you think brakes need bleeding after 18 months?
Genuine questions BTW because you are the opposite of my thinking. That and brakes not needing bleeding every 18 months.
Helmets at the moment, on my third in 12 months.
Only items that were on my original build are:
Headset bearings and one cup, front XTR mech and the spacers under the stem.
Everything else has been broken or worn out in the 5 years I've had the frame - hate the guess how many chains/cassettes I've been through, and managed 3 rear mechs last year...
Everything is consumable and is ground back into little pieces to rejoin the earth. Not sure there is ever much of my kit that is ever worth selling on rather than binning 😥
Never understood the unmarked components for sale here and ebay as ever being really used?

Usual drivetrain stuff and above all else bars, replace them every year or if they have been crashed. Picked up a pretty bad injury that still causes issues when a set of Azonics failed on me going into the Bombhole at Aston Hill about ten years ago.
Rims if you run rim brakes.

I have had my current bike for 18 months and in that time ,3 sets of pads ,1 set of xt brakes ,a new saddle a new seat post ,2 cassetes 3 chains ,a frame ,new wheels 3 tyres,tubes grips ,cables ,rear mech - actually i will save time as the only stock parts are a stem and bar combo - Well FRICKEN done coonondale you built a ****in LEMON there ha ha ,but i love my NEW bike as its custom to the point of 10 xx
brake pads,rotors,grips,tyres,tubes,cables and chains everything else should last at least 9months beyond that it's a plus as far as mechs go(saying that my xt one fitted to my hardtail is 5+ years old now and still working a treat(has had new jockey wheels)

Need to define 'consumable' a bit more I think.
Pretty much everything is a consumable on a long enough timeline. For me, I would call it a consumable if it's something that needs replacing within maybe a 12-18 month cycle.
For me I think that would just be the chain, cassette and probably gear cables. Hubs and headset would need attention but they are serviceable so not a consumable. Edit to say, inner tubes of course.
If it's small and moves alot, or is a tyre, or grips.
Tyres, pads, bearings and Drivetrain. By Drivetrain I mean chain, cassette and rings.
Most everything else lasts long enough or only gets replaced due to crashes.
The answer for me is anything that you have sat at home ready to replace the worn/ dead bits.

Brake pads
Gear cable inners
Chain and drive
Everything else is 'structural'.. will need replacing, but less often.

I dont consider crash damage to be consumable... unless you have a contract like cal crutchlow, who gets through 8 bikes a week!
