Only done it once and I'd agree, also happily surprising that the wheel didn't subsequently collapse. And what was also pleasantly satisfying when, 8 months later I read about "dishing" the built wheel wasn't too far out 🙂

Always enjoy the warm feeling on first spin after changing gear cable\outers and indexing gears. Those easy unforced precise gear shifts compared to the stiff clunky pre maintenance shifts.
Setting up a tubeless tyre. Hearing the satisfying pop of the bead seating on the rim, followed by the nail-biting suspense of wondering if I've taped it up properly so that it holds air. Seeing it still inflated the next day feels like... victory.
I manage this about 25% of the time.
Replacing a gear cable and getting the indexing spot on first time, hearing it snick up and down through the block. Love it.

Fixing something you've never fixed before. My KS Lev was playing up . Was just rough and horrible. Stripped, cleaned, bushes replaced and everything lubed up. Got it working perfectly again.
Torquing stem bolts.
But the best one, it's got to be the ping of the tyre as it goes up tubeless. That's the sound of success right there.
Completing a brake bleed without any fluid spills, both levers feeling the same and no disc rub.
And any job where you have at last invested in the right tools which subsequently make the job a squillion times easier and make you wonder why you’d not just spent the money on the tool years ago.

THe one that resolves whatever the issue is. Yesterday that happened to be fitting a shock into both the Sworks and G-160, so the bikes were able to be used.
If picking 1 particular job though, i guess bleeding brakes and getting the feel perfect.

Yeah, the OP said quick jobs which is why I restricted it to just the lacing. That’s pretty quick and you go from pile of bits to “wheel”.
Getting cup and cone bearings just right always feels good.
The early part of wheelbuilding / lacing where a twist of the hub and adding the next spoke transforms it from a bird nest into something with a spoke pattern.

I too was torn for choice. Love new grips. Bar tape is a bit stressful. A clean chain is good, but a bit messy. New tyres, well seated, are lush... But a job that can sometimes get a sweat on.
So for me it is new gear cable. Work of 5min, and then slick shifting for a good long while.
Inflating a fat tube with a mini pump, it's an endurance workout! 😉

Undoing a bolt successfully and self satisfyingly putting it down to having greased it when you tightened it months or years previously.
Cleaning the bike after a wet and muddy ride.
Servicing my bottom bracket, it’s got everything, the right tool for the job, the correct grease, the right torque setting.
What’s not to like.
Jockey Wheels, remove, clean, apply grease, refit.
Facing a bottom bracket shell so its all shiny instead of dull alloy, especially when it turns out it needed it.
Getting a tyre on without using levers, a rarity these days, followed by the bead popping, double whammy.
New bar tape. Fitting a rear mech and indexing it by eye before putting the chain on. It's taken me years to work out this is the quickest way to smooth shifting.
Changing cable and outer, such a simple thing that makes the bike feel new again.
Changing just the inner cable and getting perfect shifting again is the one for me. All of my bikes have a portion of the outer going through a bit of the frame so that adds faff and complication. Getting away with just a new inner and flushing out the crap with some GT85 feels like cheating!
Honourable mentions go to fitting new grips and sealant top-ups through the valve, both feel good. Although as my bikes haven't been outdoors at all this year I'll get immense satisfaction later pumping the tyres back up on the hardtail, do it for every ride but the symbolism of it will make me smile a lot.
Servicing Shimano pedals. The bit where the grease purges back through and out with a noise that is half fart and half popping bubblegum is a magic moment.
I acquired two of these from work...

...and just spent two evenings sorting out EVERY little spare washer, nut, screw, bleed block, olive, brake pad, travel reducer, etc, etc.
Even sorted out all my crank bolts by colour and length into sets of 4 or 5.
VERY satisfiying 😆
I always enjoy just giving my bike a once over - you know a general fettle to keep it in good road going condition. I do enjoy a wheel build as well - very satisfying to start off with a rim a hub and a box of spokes and end up with a wheel. A deeply clever invention and a beautiful piece of engineering is a spoked wheel 🙂

Yes it's lovely to go out on a silent bike. Doesn't last long.
Having a like-for-like replacement for a worn part ready to pluck off the shelf.
Tensioning a new wheel. And the PANG of a bad tempered tubeless tyre finally going onto the bead.
My fave is tapping a BB shell out prior to new BB fitting so the BB goes in by hand ✋
