Trying to return to use a set of the M875? XT brakes using the Shimano funnel and syringe method.
They seem now to be quite bitey but there is no free stroke travel at all on the lever?
The free stroke adjuster screw doesn’t seem to do a great deal and when I wind it out, how long before it drops out?
I’ve got a litre of mineral oil as a precaution but would rather not use it all!

You've attained brake bleed nirvana!
Of course I meant to do this but the daughter doesn’t like them.
Do I need to do a more worserer job of bleeding them?
Think you've gotta push the pads back or something? Or maybe you bled with pads in and not the bleed block? You get too much oil in the system that way.
Pads were out, pistons pushed back in and a block in place.....
I think the on/off strength of XT brakes are a deliberate 'feature', no?
Can you at least adjust the lever closer to the bars? It’ll become normal after 1 ride...
The on:off style was a ‘feature’of Shimano brakes before the ‘servowave’ generation (M785 XT are servowave brakes). The newer style are intended to retain big power lower into the lever pull but allow a lot more modulation early in the stroke before they bite hard. You make the current Shimano brakes behave like the old ones by overfilling them, and this is common advice.
Overfilling was notorious for blowing lever seals on Formula brakes once upon a time. I’ve wondered a few times if it is what is really behind the leaky piston seals that won’t quite go away...
