Vitus, Canyon and YT seem to offer good value for money, presumably due to the online sale nature of them.
Yes, I am feeling the need to update my current bike and I'm so out of touch with current tech it's not even funny, i'm not even sure what Boost is
Sonder (Alpkit brand) and Bird are two homegrown UK brands that produce great value bikes that ride well.
If you aren't a brand snob then Giant, Scott and Trek bikes can all be had for pretty cheap in the sales.

Whyte bikes, although I've never had one, always seem reasonably priced and well specced considering you still get them from actual shops so no faffing about with warranty returns in the post.

Bang for buck you will not beat the guys that sell direct, like YT / Cannon.
But you have to love your bike, so go and try out a few. Bang for buck wont count for anything if you dont like riding it.
If you want a future-roof frame definitely go for boost, which i think was originally designed for steering stiffness on the front of the bike and now to accommodate the every increasing number of gears on the back of the bike.
I have always found Giant to make the best bikes for the money quality wise, but they can be a bit dull.
Ignore many scare stories on Canyon, i have found them and their bikes to be excellent.

Calibre (Go Outdoors brand) are well regarded for value for money. There's currently 15% off everything too if you're in the market now.
Voodoo and Bordman at Halfords, and Decathlon are worth a look too.

By far the best bang for buck or anything else are used bikes, they're fetching nothing

Bird- good designs and specs with lots of options and great service/support!
All bikes are much of a muchness now. All have gravitated to similar designs and geometries for a given discipline, all are made in the same small handful of manufacturers around the world. Just decide on your budget and go for the bike you like the look of the most and you'll be there or there abouts. If you know exactly what you want in terms of feel of the bike and want specific geometry or suspension characteristics then you can narrow the field down a bit, but most of us just ride what we've got and are none the wiser so it's all academic really.
Giant's Maestro suspension system is a copy of the patented DW-Link (they were sued and settled out of court) used by high end (and highly rated) brands like Turner, Pivot and Ibis. Which means their bikes ride like a £4k - £5k bike for under £2k (if you shop around). The Trance is well worth a look
