Roadie/CXer here - not all that accustomed to finding good trail loops up on the moor so hoping y’all might have some recommendations?
I’m pretty fit but fairly technically inept, and ride a rigid fatty (ooh err!) so probably best to avoid any super steep/techy stuff.
Keen to explore a little more, let me know if you have any routes down this way you’d recommend.

Look up the princetown/burrator reservoir loop, not very techy but nice enough!
Exmoor has some lovely flowy singletrack around dunkery beacon, horner woods, hawkcombe.
Ah yes, I know that one - assuming you mean up the Scout Hut climb and back down via Widowmaker, or the old tramway up to Princetown from the reservoir. Took the eldest on his first bikepacking overnighter on that loop!

When it's dry (or maybe when it's wet on a fat bike?) can also go up past Ditsworthy Warren and up the stone row to Higher Har Tor, possibly with a run over Ringmoor Down. Personally I think it's a more interesting climb. With a bit of cheek can also ride round the leat from crazywell pool, along the stone row to near down tor then drop down to Deancombe.
Favourite bit of trail for me is Bennett's Cross down to Headland Warren. Can link it in from Postbridge - Soussons Farm - around the east side of Challacombe Down.
Can also do vaguely blue standard loops out of Avon Dam or the Lydford area.
If you want a very mellow out and back into the high moor Ivybridge to Red Lake up the old railway is good, basically a gravel track. Likewise Okehampton up around the old military road, that's maybe a cx job.
