Where can I find some (not sure if they're the same shape as Shimano ones) ?
They're a cartridge fit, with a small retaining pin.
Any recommendations on type - SwisStop? Kool Stop?

The ultimate V-Brake pads would appear to be either the KoolStop Salmon Compound, or, if that wears too quickly for you in the conditions you ride in, Dual Compound.
They come in a few different size inserts.
