I've not been buying bits for a long while and just went to look for some UST tyres only to find they are non-existant now.
I run Mavic UST rims and have always run UST tyres with a bit of sealant in to help with punctures. - what should I get now? Continental or Schwalbe used to be my favourites

Yep, ust seems to have gone, but pretty much every tyre out there is tubeless ready.
Any modern tubless tyre will be fine just use the recommended sealant amount.
Proper ust tyres are totally air tight but as a result very heavy
I tried a "tubeless ready" tyre and couldn't get it to inflate with my track pump. never had that problem with a ust. Whats the secret???
Have you tried sticking a tube in for a bit, get the tyre in shape and popped on, then only need to seat one side when you take tube out. I’m not an expert and have a compressor so that’s cheating I guess.
Yes tried that but no luck. Can’t inflate tyre quickly enough to seat it. The side wall seems too floppy
What tyres have you gone for - some are better than others and some rim / tyre combinations work better than others too?
The problem one is nobby nic 2.35 on a 717 ust rim
Try fitting pegs to the sidewalls. Hard to explain but it pulls the bead out closer to the rim edge so that less air escapes past the bead and more pushes out behind the bead.

The other thing is to fit an inner tube from the wheel size smaller than yours onto the outside of the tyre. I found it tricky to do but it did squash the thre so the sidewalks were tight against the rim. That was when I was trying to fit a chunky monkey to an old non tubeless ready Mavic d521 rim with a ghetto inner tube bodge. It made it inflate, but the tyre didn’t hold air well at all with that rim / inner tube bodge so I gave up and just built new wheels in the end with tubeless ready rims.

Yep, the problem is bead shape. Part of the UST standard was a square section bead for better sealing. Modern WTB rims and tyres have adopted this (which is partly why many using WTB tyres on others’ rims can find fitting a problem).
Non UST tyres have a round bead. It shouldn’t take a picture being drawn to demonstrate why a round bead in a square channel tends to let a lot of air past it until a seal is achieved.
Check your valve seals properly and then move on to general tubeless seating fixes like large volumes of high pressure air in short time. I’m a bit surprised you are having so much trouble though, I used to have an ancient set of Crossmaxes which were UST and regular Schwalbe Hans Dampfs went up with a hand pump on them...
Had no problems with Specialized Slaughter & Maxxis High Roller II tires on my 26" Easton UST rims. In fact they went up easier than the UST Kenda Nevegal. Removing valve cores helps.

They were much heavier due to full air sealing of the walls, and the realisation that you still need sealant for punctures made the point of UST being sealantless system to inflate and fit, redundant after people realised TR works just as well if you are using sealant anyway.
I have an SKS Aircon 6.0 trackpump which usually inflates any tyre although due to the very high volume design it’s useless for 700c bikes. For real problem tyres I used to use the coke bottle approach but went crazy a bit ago and bought an Airshot which does exactly the same thing for £45 more but looks nicer and is easier to look after. If I didn’t have the Airshot I’d happily go back to the Coke bottle.

They were awesome in the early days of tubeless as they were so reliable - this is when Stans was a company selling rim-strips and sealant and alternative set-ups were really hit and miss.
UST rim choice got to be a ball-ache, though - after the initial product development Mavic didn't seem that interested in keeping in front of things. Once Stans and others started putting out decent wheelsets, TLR tyres got serious, there was no reason to keep running UST.
