I need to change the brake levers which are currently XTR 987 with 987 callipers. Can I use the latest XTR 9100 levers?

What about mineral oil. Will I just need to top up a little bit? Do I need specific type for Shimano?

I believe Shimano state that their pink mineral oil contains seal preservative within it.

You will need to bleed the brakes if you are fitting new levers. Best to use proper Shimano fluid to avoid any problems. Obviously, you cannot use regular DOT brake fluid.
