Hi chaps,

Boring as **** question, is it safe to use more than one pedal spacer?

I've got crank boots on the cranks, and an inboard bearing, so to stop the pedal rubbing the crank boots, I need two spacers.

Anyone do this?

yes, it's fine. Or at least with alloy cranks it is.

I think there's an engineering "rule" or guideline that states the minimum length of thread you can get away with using is the diameter of the threaded section. If that makes sense.

Yep, that makes sense. I'm only adding less than 1mm to the axle, and its not covering the threaded part of the axle.

This is on carbon cranks. If it were alloy, I wouldn't care about bashing them into the ground.

Yeh, you should still be ok. I think carbon cranks are probably a bit more prone to failing under the extra "leverage" or stress that spacing your pedal out causes. Should still be fine though; afterall, you can buy 25mm pedal extenders!
