My XT rear brake constantly lightly rubs, but only when I am coasting, when peddling it is fine. Any ideas why this could be? Is it due to slight frame flex when I am peddling?

Mine does too. It may be you have a sticky piston. Try dripping some mineral oil on the pistons and gently work them in and out wiping the pitons as they are exposed. Push them back in and repeat the process 3 or 4 times. Dont let the pistons come out too much. 5mm max.
A full bleed might help too.
Have you made sure the rotor is straight and the caliper centred on the rotor?
