Can you tell me about all the different choices of tyres like folding and non folding and kevlar and stuff

Kevlar bead = folding = lighter
Steel bead = non folding = heavier

It's only the bead on the edge of the tyre, doesn't effect the side walls or tread or anything.

That's right, although the folding tyres may have options for stronger sidewalls and the like (aka 'snakeskin' etc).
