Anyone recommend a decent front and rear combo for a steel hardtail that can cope with wet gravel and wet loose slate (and tubeless too)?

Minion supertacky. Feels like your tyres being glued to the trail if thats what youre after. Raciing ralph back rocket ron front for me all the time 😉

Hans Dampfs (trailstar front, pacestar rear), not too draggy and grip well

wet gravel and wet loose slate

Considering your grip in these cases relies far more on the ability of wet loose gravel to stick to other wet loose gravel, and loose slate to not slide around on other bits of loose slate, may I suggest tyre choice will have little bearing on the situation?

Your ability to judge and ride within the limits of the surface presented is of far more relevance...

Just sayin'....

I'd recommend continental X kings protection. Amazing difference in grip and confidence over my old race kings. But did notice slight resistance on downhill freewheeling.
