I have just purchased a road bike with a 11 speed chain set. My turbo wheel has a 10 speed cassette. Is it possible to get away with using this wheel on new bike in turbo?

probably but it will skip in some gears for obvious reasons

FWIW i used an 8 speed shifter with 7 speed many moons ago and it was tolerable - this was on my hack but it was never possible to set it up to have all the gears work perfectly.

It's worth checking if your turbo wheel will take 11 spd cassette.

11 speed chain is narrower and will tend to foul 10 speed cassette cogs causing shifting issues and wear

Cheapest 11 speed cassette you can find. Loose one sprocket. Muck around with spacers at both ends of the cassette to get the remaining 10 in the right position. Sorted.
