So, had good success with first play around with tubeless , using Orange seal.

I've given both tyres a top up of fluid a month or so in, which means I'm now out of Orange seal.

I picked up a good deal on a ltr of  Effetto Mariposa Caffelatex Sealant , bit cheaper than the Os.

Question is, am I ok to add the Caffelatex, or do I need to remove the tyres clean out the old stuff before starting again?

It's never a good idea to mix different sealants.

they certainly make a big thing of being atex free and all that

TBH without knowing the chemical constituencies of both mixes its hard to say if it is ok or not

My default would be  to not  mix or risk it if the tyre was getting old/ a massive pain to seal

YMMV

Ive mixed various sealants over the years with no noticeable issues

Normally buy whatever sealant is cheapest at the time and add it to the tyres when the old sealant gets low

You don't need to top up sealant every month - it lasts ages. I never do it tbh unless prompted by some sort of performance issue - not saying that's a good idea but you can certainly bang it in there and forget about it for 6 months.
