Been doing flat out rides 20-30 miles with plenty of hills but apparently slow is the new fast, just tried a 60-65% max heart rate ride, found it difficult to stay in the zone and just spinning up the hills instead of attacking them.My question is will i benefit from this type of rideor just carry on going all out or a mix of both?

My understanding is that you have to do that kind of ride for a long time. It's about becoming more efficient at lower heart rates, and, yes, it does seem hard at first.
