Size would be médium.
Pivot Shadowcat, Yeti SB135, Propain Tyee, second hand or old stock Santa Cruz 5010 v4, all good options.
I love my 5010.
Transition Scout is another option.
I've recently built a Vitus Escarpe and it's fast turning into the best bike ever, it does have a 170mm fork though.
I had a Geometron G16 with 27.5 wheels and that was a weapon. They still come up second hand.
I rode mine for 4 years and would have kept it for another 4 if it didn't get nicked.
The frame was much higher quality than what I'm on now.

I've got V4 Edit with Kitsuma coil, it's lovely to ride and looks great in raw with a black back end.
Depending on the stroke of the shock you can have up to 168mm of travel too. I went for this option and don't regret it paired with a 170mm fork to match.
I was riding an Aether 7 before and with the climb switch on the Edit it pedals nice and lively. Climb switch off is a bit more bobby but fine if you aren't in a rush.
In fact we have an Aether 7 (the wife's bike), an Edit and soon to be 2nd hand 2019 Bronson frame for the lad.
I feel a bit gutted for the team at Airdrop that we didn't potentially get to see Craig Evans raising the profile for the Airdrop Slacker at Hardline.
Thanks all, some good options there. A friend has an Airdrop but it is heavy. Currently have a Rallon, last of the alu modèl. But last year got some Fox 36 factory, hence looking for a newer 27,5 frame.

There was a Giant Trance X on Pinkbike last week, but seems to have gone now. New frame stripped of parts with an Ohlins shock for £600 IIRC. Shame it's generally only available as a full bike.

Would a Yeti sb5c from 2018 feel very différent to my 2017 rallon ?
The biggest change would be loosing 3 cm of rear travel.

Likewise just built up a Sommet 27 from the CRC sale and really enjoying it. Next week will be it's first test for me on proper trails but it's been feeling great on local rides. Currently running 26" gear on it so the BB is a little low but other than that it feels great and should be fun on the descents! Actually a bit worried I've overbiked myself at the minute though, will have to see how I feel after a proper ride!

The SB5c isn't a 2018 bike. the SB5 had replaced it. Both the SB5c at 413mm, and the SB5 at 424mm have considerably shorter reach than the Rallon at 447mm, and the front/Rear Centre ratios would also be quite different, given their chainstay lengths. All things considered I think you'd find them very different to ride.
Lastly, maintaining the Switch Infinity link is a pain, in UK conditions.
Just be careful on geometry - around 2017/2018 and even 2019 some brands hadn’t fully caught on to modern geometry by then.
I wouldn’t think the airdrop edit frame is monumentally heavy - it depends more how you build it up. Put fast rolling tyres / light wheels on it and it’s going to feel fairly brisk.
When I tested one back to back (v2 edit) with a Bird Aeris 145LT (similar to the later AM160) the found the Bird more lively, but I can’t say I noticed a weight difference particularly. Both of them had Yaris on them but the Edit had a coil vs air shock on the Bird.
Personally secondhand bikes from Yeti and Orange would get nowhere near my list. I’ve known a few people that have had one or the other and all have had some kind of frame failure. Could have Oranges with cracked swing arms, and the Yetis with crack frames / swing arms and destroyed switch infinity pivot things. Yeti can also quibble on warranty.
A Transition Scout would probably make my list for a 27.5” bike as might a v4 Santa Cruz 5010.
The Yeti frame failure is a worry.
I am also looking at 2020 Santa cruz bronson.
Living in the south of France, mud is not an issue.
