Can I use chainring bolts described as for a track Chainset on a SLX triple I'm going to use as a single ring set up?
Usually, yes.
Only thing you might need to be careful of is that track chainrings often have splined female sides so that they embed themselves relatively permanently in the spider allowing for easier chainring changes.
Would that be a bad thing though?
Well, if it's a triple crank you will probably want to run the single ring in the middle position, in which case the splines would embed themselves in your chainring rather than the spider. Unless of course you put the bolts in back to front, which would certainly still work, just not look so pretty.
