Michelin road maps (yellow, Local, 1:150k) denote "Parcours pittoresque" with a green band along the road. Linking up off-road (voie verte) routes with "pittoresque" minor roads is a successful approach.

Spend some time on RWGPS and look at Streetview to determine what the roads are like.
