I thought Maxxis were tough but after the second pinch flat at the rim I need to find the toughest rear tyre I can before throwing a hissy fit and taking up gravel riding instead. The second time even happened after running a Huck Norris at 19psi. Taking the HN out it didn't have a mark on it. So as long as I run at least 19 in the rear, I'm sacking off rim protectors too. Please help!
I'd suggest the new Michelin e-Wild - available in 2.6" and 2.8" with different front and rear treads. It's basically a big Wild Enduro!

I've got the front 2.6" up front on my Stumpy Evo and it's staggering. Incredible grip, really nice carcass that's tough, and wear seems good too. The rear version is a tougher casing than the front too and a faster rolling tread pattern.
Should be ideal for you I reckon.
I've been running a Butcher Blck Dmnd 2.8 x 27.5 at 15 psi since last summer on the Turbo Levo and it's yet to let me down.
The WTB TCS Tough casing Ranger is pretty robust. A bit heavy and wooden with it, but quite hard to destroy ime and fast rolling, not sure what they have in their range that's toothier. You can find them for about £35 - Sonder has the 2.8" one for that.
I trust WTB when they say "tough", most companies seem to build to a target weight but they throw carcass at the things til they work, even if it means putting out a trailbike tyre that weighs as much as a dh dualply.
TBH though, I'd be asking myself if plus was for me, if I was getting those results. (well, in fact I did, and it wasn't)
What's the best way to repair a hole right on the tyre bead? Patch it from the inside?

+1 from me that WTB ‘tough’ means just that.
Plus tyres have suffered from the start with manufacturers being scared of the weight. Sooner or later they’ll all realise that any fun added by a lighter tyre is sapped completely by stopping for damage that even the best tubeless setup can’t cope with.
I have been running Maxxis Rekon+ 2.8 without any problems.

Rekon+ 2.8 Exo Protection on the rear (it's only ever the rear that's the problem for me). Twice now they've pinched in one place just above the bead and sealant never manages to seal the spot. Presumably because it's harder to get to if pinched up against the edge of the rim. This time I'd been running a Huck Norris and 19psi and the HN has no cuts, which leads me to believe that it wasn't caused by the tyre flattening out on the rim.
I found the "tough" Ranger 2.8 was OK but not nearly as tough as the 2.3in "tough" WTBs - which are up there with Supergravity for puncture resistance.
Maxxis Exo 2.8 possibly a bit tougher, I have put holes in both in situations where a proper tough enduro tyre would have been OK.
That Michelin E-Wild rear might be the answer at 1.3kg, I'd like to try one anyway, but my rear HR2 already feels draggy at 1kg.
Michelin Wild AM 27.5x2.8" here: cheap, not heavy at all and seems to be tough as an old boot.
