My main "road" bike is a Shand Stooshie with discs, mudguards and fairly relaxed geometry. I ride this about 2,000 miles a year...
...but I also feel the need for a bit more roadie focus, so I also ride an alloy Emonda with caliper brakes and lightweight kit (1,500 miles a year). It's over 2kg lighter than the Shand and climbs with much more vigour.
I'd like to replace the Emonda with something a bit lower at the front end and, y'know, I'd just like a new frame. 🙂
I'm really attracted to a custom steelie, or a 931-tubed off-the-shelf, or perhaps a titanium frame. Carbon frames appeal on weight, but I've not seen many I like.
Will I notice another 500g from a nice steelie, or would I regret it? I'm not a true roadie's roadie, but I do like to be able to stamp on the pedals uphill.

My Edmonda SL frame hasn’t left the garage since I had my 853 frame built, a 953 version is definitely in my future plans
I’ve got a Rourke 953 & although it is a lovely bike to ride there is no doubt it is heavier than a modern carbon frame. I notice the weight when climbing albeit it does carry mudguards as well. Whether this matters to you is dependent on how much climbing you intend to do on it.
You will notice it, not nec the 500gm but the difference in the ride.
Depends how important that is Vs having a steel bike.
I've been round the houses (including a 1.6kg road frame, the lightest actual weight I am aware of) and happy with my Supersix nano, but I have no loyalty to any material or nostalgia.
