I've got a carbon joystick bar. It's been a bit "clicky" under load but nothing too bad. That seems to have amplified lately. It has an area that's "sticky" around the clamping area, to prevent slip. Should I also put a little carbon paste on it?
I'm also going to give the headset bearings a clean and refit just in case it's emanating from there too.

I wouldn’t grease clamping area of any bars !!
I'd never grease a stem/bar interface.
Mine got a bit clicky in the dry weather, but just needed the stem bolts nipping up.
Carbon paste is a great idea though.

Carbon paste is different to grease though.
Usually use it to STOP unwanted slippage.
Take all off and clean, carbon paste on bars, clean and grease stem bolts, sorted.

Carbon paste if you have some, not grease. Also, check your headset bearings - they are prone to creaking / cracking once they go..
Carbon paste on bars, take off and reseat stem on steerer, grease stem bolts and top cap bolt, check and regrease headset. Should do the job.
If not, start the neverending search for the noise...
