I now there's a gazillion threads but...
We were going to be staying in Porlock next week only there's no room at the inn so we're heading to the Quantocks for a few days instead, mostly going to be eating, drinking in the evenings and pootling about during the day
My other half is capable enough over moderate terrain but lacks confidence if it gets too steep or bumpy

Try the mbr Classic route. Nothing on that is too steep or bumpy. There are some short steep climbs but you can walk those. Or just head up the top of crowcombe and pick whatever tracks you fancy.
She'll love the Quantocks, especially Holford Combe and Hodders Combe 🙂

You'll both love the Quantocks for that sort of riding. They're not particularly technical, but the descents are lovely and flowey and as fast as you want to make them.
Hunt out Bin Combe if you can. Perfect ribbon of singletrack through gorgeous old woodland on that kind of gradient that seems to just keep you rolling. Can pop out the other end into Nether Stowey for tea at Coleridge Cottage.
The bottom of Holford Combe is stunning too. The heather is just starting to die off but is still quite a spectacle on the top of the hills.
