Threadlock or grease ?

Apologies as ever for my ignorance, but I never really know what to put on bolts when I’m working on my bike - which ones need grease and which ones need threadlock?

If you want to remove them often - grease.  If they are at risk of seizing coppaslip.  If they are at risk of coming undone threadlock

there is almost nothing i use threadlock on - the bolts that hold the frame to the dropout on my shand.  Everything else is coppaslipped.  I rarely use grease either.

I know there is a theory that coppaslip can make galvanic corrosion worse but on a bike you get a lot of steel bolts into alloy components and I always coppaslip them and never have any seize

Grease, unless...
it's specified, e.g. suspension pivot bolts
it's prone to coming loose, e.g. full length mudguards

I only threadlock frame pivot bolts, anything else gets a good quality high pressure grease like mobil xhp222.
Well, apart from the suspension and freehub pawls having their own ickle pots of overpriced superduper extra special slippy stuff.

I generally use...

Threadlock: Anything I really don't want to move and rarely need to touch, brake rotor & calliper mounting bolts, derailleur hanger bolts, um, etc.

Park Tool anti-seize: Long term non moving stuff, eg dropper/seat post, bottom bracket...

Dab of grease or anti-seize or just nothing cos I forget: Anything else.

Oh and overpriced superduper extra special slippy stuff inside suspension & dropper, but that's a bit different.

The exception is crank arm pinch bolts. Greased by Shimano, I've had 3 sets come loose including 2 new bikes, now degrease and use loctite 232 and torque FT.

Anything that gets torqued gets done dry or with threadlock, the only things that get greased are mating surfaces.

Grease/copper slip most bolts. Threadlock only on my pannier mount bolts as they did come undone due to an off road commute. Dry on disc bolts.

Loctite 243, medium strength is good for most applications. It acts to stop bolt’s rattling loose and also is good for an anti seize agent. Coppaslip for seatposts, grease, Shimano, for pivots and wheelbearings, molybdenum for headsets. White Lightning clear, waterproof for suspension bearings… agreement TJ? No, not on STW, but that’s my experience to share with you! I’m not going to share my thoughts on chain maintenance…
